Locally-Caught Ladram Bay Prawns

Caught by our boats in the waters of Ladram Bay, overlooked by Greendale farmland, these succulent Prawns are a shining example of the wonderful local food we love to champion. Plump and delicious, they're supplied cooked in their shells, ready to be peeled and eaten. Delicious!

Fishmonger's Tips: Prawns (and their crustacean relatives) turn pinkish-red when cooked because they contain biochemicals that react to heat. Lobsters, Crabs and Prawns all have a pigment called astaxanthin in their shells, which is hidden by a coating of protein while the animal is alive. Cooking destroys the protein and releases the pigment, hence the colour change.

How to Cook: These Ladram Bay Prawns are supplied cooked and ready to use. They’re perfect for a classic Prawn Cocktail; simply peel their skins off, reserving a few whole to use as a garnish, and then pile them on top of crisp, shredded iceberg lettuce and slices of cucumber. Serve with lemon wedges and a dish of Marie Rosé sauce.
